Every occasion is the perfect occasion for cake, especially a cake using my Dr Pepper Cake recipe. Honestly, when you stop and think about gatherings there is always cake involved. With summer in full swing, you can bet there will be a ton of family gathering and backyard bbqs. If you are like me, the first thing you look for is the dessert table. You can normally find your standard desert but you know there is always that one relative that will shake things up a bit and bring a dessert that no one has tried before. Well, I’m that relative coming to visit with a Dr Pepper® cake. LOL!
I love bringing tasty out of the box items to gatherings and if you’ve been around the blog for a bit, you know my specialty is dessert! I am here for all cakes, pies, and cookies. Shoot! If you catch me on a good day you can even have a taste of my homemade butter pecan ice cream. Yass!
Well for the Fourth of July, I decided to make a Dr Pepper cake. When I mentioned I was making one, everyone was super excited to give it a try. Honestly, I’m never short on volunteers to try my baked goodies. LOL!
Anywho, the cake is relatively easy to make. If you love chocolate and Dr Pepper, this one is for you. Just don’t do what I did this time around…I overcooked the frosting because I was on the phone running my mouth. If that happens to you, just add a touch of hot water and it should correct the consistency.

Dr Pepper Cake
Ingredients
Dr Pepper Cake
- 2 C Sugar
- 2 C Flour
- 1 ½ C Small Marshmallows
- 1 C Butter
- 3 T Cocoa Powder
- 1 C Dr Pepper
- ½ C Buttermilk
- 2 Eggs
- 1 tsp Baking Soda
Icing
- Icing
- 1 Stick Butter
- 6 T. Dr Pepper
- 3 T. Cocoa Powder
- 1 Box Powdered Sugar
- 1 C Chopped Walnuts
Instructions
Cake
- Sift flour and sugar together. Add marshmallows to the flour and sugar mixture. Set aside. Put butter, cocoa, and Dr Pepper in a saucepan. Heat until butter melts. Pour over sugar and flour mixture. Gently stir together. In a separate bowl, mix eggs, buttermilk, and baking soda. Add to first mixture. Bake 45 mins at 300 degrees in a bundt pan. Remove from the oven and let cool completely in pan. (If you don’t cool it completely, it will crumble). Cover with icing.
Icing
- Boil butter, cocoa, and Dr Pepper until the butter melts. Add sifted sugar and nuts. Drizzle over cake.
Just a warning, this cake it heavy like a pound cake. Don’t be alarmed if it has some weight on it. LOL!
