There is nothing like a simple recipe that doesn’t require any baking and only takes minutes to put together. This recipe was created out of necessity and the craving for a chocolate chip ice cream sandwich. Don’t judge us, but my daughters and I have a serious love of ice cream year-round. We are the people in the store looking for ice cream sandwiches and it’s 30 degrees outside. Yes, the temperatures drop that low during the winter in the south. Anywho…At one point, we were going to the store almost daily just to buy one ice cream sandwich and it finally hit me to start making them at home.
My daughters were super excited about the idea of having a stash of goodies in the freezer. Plus, they have always loved hanging out in the kitchen with me, so this was always been a great way to have a little mother-daughter time. Now that they are older, they can whip up these sandwiches on their own. Winning!
When you see how simple this is to put together, you are going to be super shocked that you didn’t think of it too. All you need is your favorite ice cream, Chips Ahoy! cookies, and chocolate chips. Yep, three ingredients! Woot! Woot!
I like to start with my homemade vanilla ice cream for me and strawberry for my youngest. However, if you don’t have an ice cream maker, don’t worry because can use your favorite flavor of store-bought ice cream. To save time, it’s always easier to just grab a carton of ice cream. If you purchase ice cream, let it sit long enough to soften for the second step.
While you are waiting for your ice cream to soften, set out two to three small paper or plastic cups. Please don’t use Styrofoam.
After your ice cream has softened, take a large spoon and spoon the ice cream into the cups. I know it sounds crazy but just follows me. This next step has saved me a ton of time and frustration. A couple of years ago, I was watching something on TV and I saw someone take a carton of ice cream and cut it into rings. The little light bulb went off in my head! Until then, I was using an ice cream scooper to fill my sandwiches. I’m sure that process is the source of a few grey hairs. LOL!
Make sure to firmly pack each cup with ice cream and fill the cup to the top. I like to use a butter knife to smooth out and level the top. Feel free to eat whatever won’t fit into the cup. I won’t judge you. LOL! After each cup is filled, place them in the freezer until the ice cream is firm. This should only take an hour or so, but I prefer to do this the night before and just freeze my cups overnight.
When your cups are ready, remove them from your freezer and place them on a cutting board. This is why I love having a plastic cutting board…clean up only takes a second. OK, are you ready to have your mind blown?
Place the cup on its side and with a sharp knife, cut the cup into rings. Yes, you read that correctly. You want to cut the cup with the ice cream in it…I promise you will see how quickly the process goes by when you do it this way instead of using an ice cream scoop.
After you cut enough rings to make your sandwiches, slide the knife down one side and peel the cup away. After you are finished, place the rings back into the freezer while you prep your cookies.
While the ice cream is chilling in the freezer, lay out your cookies and place your chocolate chip on a plate. You can use other toppings, but we love chocolate chips.
When you have everything set up and ready to go, remove the ice cream from the freezer and let the fun begin.
You want to have one cookie with the flattest side up and you simply place one of your ice cream rings on the cookie. Next, place another cookie on top to create the sandwich. I like to complete all of my sandwiches before moving on the adding the chocolate chips because you need the ice cream to slightly soften to hold the chips. Don’t worry if it softens like mine did, you can go back and form them by wrapping them in plastic wrap. I’m a perfectionist, so I might go back and reshape them.
After you are done creating your sandwiches, roll each one in the in the plate of chocolate chips. If the ice cream has softened enough, the chips will just hop on for the ride. When you are done, place the sandwiches back in the freezer until it’s time to serve them to your kiddos.
If you have extras, place them in airlock bags to prevent freezer burn. If you don’t have a machine, you can wrap each chocolate chip ice cream sandwich individually in plastic wrap and place the sandwiches in a large freezer bag.
The longest part of this recipe is waiting for the ice cream to freeze in the cups. It really takes 10-15 minutes to put the sandwiches together and garnish the edges. Again, it’s so simple that my girls started making them on their own. I cut the cups, but they did everything else. Now they are older and are completely on their own with creating one of their favorite treats. Shoot, they cook for me now! My youngest wants to go to culinary school. Yass! I’ll be her personal taste tester. LOL!

We love chocolate chip cookie sandwich ice cream in our household. I’m kind of picky with mine and like mine to be homemade cookies… but I love to use chips a hoy in a pinch 🙂

You’re going to think I’m crazy, but when I worked in a laboratory that studied obesity when I was in grad school, I used to feed the rats Chips Ahoy chocolate chip cookies and Borden’s Sweetened Condensed Milk to fatten them up. I haven’t been able to look at Chips Ahoy since 🙂
